KEY POINTS:

2 tsp butter
2 leeks
1/4 cup chicken stock
1/4 cup white wine
1/2 cup cream
4 rashers of streaky bacon
4 fresh bay leaves
Sea salt and freshly ground black pepper
Preheat the oven to 170C.
Grease a baking dish with the butter.
Trim the leeks and split lengthwise then carefully rinse to remove any dirt.
Lay the leeks in the dish alternating with the bacon and the bay leaves. Pour over the stock, wine and cream. Season and bake for 30 minutes until the leeks are meltingly tender.
