KEY POINTS:
1 chicken, quartered
Salt and pepper
1/3 cup good extra virgin olive oil
1 chilli chopped (Add as much as you like. When kids are eating I put less, then drizzle some chilli olive oil on the adults' meals)
5 cloves of garlic
1 onion, chopped
2 sticks of celery, chopped
1 carrot, peeled and chopped
A bunch of basil, Italian parsley, thyme, oregano and a little rosemary tied together
1 can of Italian peeled tomatoes, chopped
1 1/2 cups white wine
Chopped Italian parsley to finish
1 Cover the pieces of chicken in salt and pepper and fry in olive oil until browned. Take out and fry the chopped vegetables on a low heat for 10 minutes.
2 Put chicken back in the pot, add wine, then cook for 5 minutes. Add tomatoes and the bundle of herbs. Bring the boil, then cover and simmer for 30 minutes.
3 Uncover and cook for another 15-20 minutes. Sprinkle with chopped parsley. It's lovely served with fresh pasta or mashed potatoes.
