Today I am dedicating this article to the idea of shopping locally - get out in the gorgeous spring sunshine, go for a walk and spend your money on businesses in your neighbourhood who will try to cater for your every need with a smile on their face. Build a relationship and you will find that certain cuts of meat, varieties of fish and specific fruits and vegetables will easily come your way - you can't get that at the supermarket.
My lovely local butcher, who is featured today, is living proof. Interested and dedicated, he will get free range chooks in if requested, will create his own fabulous all-natural saussies, make chorizo, smoke bacon and instantly bone out a piece of meat on the spot. He even cooks his own hangi meals - brilliant!
I know a supermarket is a one-stop shop, which is a very convenient way of buying, but spare a though for the devoted little guys. They know where their produce comes from, what is seasonal and what is the best price.
From spring lamb to the freshest whitebait, first of the season asparagus, smoked fish, fresh herbs, new potatoes and creamy avocados - shop locally, make contacts and you will be amply rewarded.
Chef's tip
Lamb racks can be roasted in the oven or pan fried or barbecued. If roasting, or barbecuing it is a good idea to wrap the bones in foil to prevent them charring.Bustling from your local butcher, to grocer, to fishmonger for ingredients always manages to make dishes that little bit tastier
