1 eggplant
Olive oil
1 loaf of Turkish pide or use foccacia
Hummus
Tomatoes
Basil
Greek yoghurt
Mozzarella
Sea salt and freshly ground black pepper
1 Heat a panini machine or sandwich press. Slice the eggplant and brush all sides with olive oil. Put in the machine and press, cooking until golden.
2 Slice the bread lengthwise and brush with olive oil. Spread one side with hummus, lay over the eggplant then add as many ingredients as you fancy. Add dollops of yoghurt and finish with thin slices of mozzarella before seasoning then top with the bread, cut in half if necessary and press in the machine until golden.
