Serves 4
2 Tbs yellow miso paste
1 litre water
½ Tbs fish sauce
1 sheet of nori, torn or cup seaweed pieces
100 gm soba noodles
2 tsp butter
½ tsp sesame oil
12 scallops
Coriander and spring onions to garnish
1 Whisk the miso into the water and bring to a simmer in a saucepan. Add the fish sauce. Add the nori and the noodles and let cook for 10 minutes.
2 Heat a pan and when hot add the butter and sesame oil. Cook the scallops for 1 minute on each side.
3 Ladle the miso into warm bowls. Add the noodles then the scallops, coriander and spring onions. Serve with spoons and chopsticks.
