KEY POINTS:
Serves 4
1 x 400g or 2 x 200g pork loin
Sea salt and freshly ground black pepper
1 Tbs grapeseed oil
4 mangosteens
16 snowpeas
1 red banana chilli, finely sliced
½ cup coriander leaves
150g roasted cashews
Dressing
Juice of one lime
3 tsp grapeseed oil
1 tsp sesame oil
1 tsp palm sugar, grated
1 tsp fish sauce
1 Preheat the oven to 200C. Season the pork with the salt and pepper.
2 Heat a pan and when hot, add the oil and then the pork. Sear on all sides until golden, then transfer to the oven and cook for 10 minutes. Leave to rest for 5 minutes.
3 Prepare the mangosteens as described above in the tip. Combine the fruit with the snowpeas, chilli, coriander and cashews.
4 Whisk the dressing ingredients together.
5 Slice the pork and toss with the salad ingredients and the dressing. Arrange in bowls or on plates to serve.
