2 tsp salt
1 tsp sugar
3 tsp dried yeast
1 cups warm water
500g plain flour
Extra virgin olive oil
3 tsp cumin seeds
1 Tbs sumac
1 Whisk together the salt, sugar, yeast and water. Leave for a few minutes and when it begins to froth, add it to the flour and mix. Cover and place somewhere warm for 1 hour.
2 Tip the dough on to a floured surface and knead until soft - approximately 5 minutes.
3 Combine olive oil in a small bowl with the cumin and sumac.
4 Heat the hot plate, pull off pieces of dough and flatten between your palms then place on the barbecue and cook until golden brown. Turn once and brush liberally with the oil.
