KEY POINTS:
Serves 4
8-12 nectarines, depending on size
3 tsp brown sugar
2 tsp softened butter
1 Tbs mascarpone, plus
3 Tbs extra Juice of half a lemon
2 Tbs pistachios, shelled
1 Heat the grill. Halve the nectarines and remove the stones then place on the grill.
2 Sprinkle with the brown sugar then dot with butter and mascarpone. Grill for 3 minutes then turn over, squeeze over the lemon and continue to cook for another couple of minutes or until tender.
3 Finely chop the pistachios then toast for 2 minutes. Sprinkle over the nectarines before serving with the extra mascarpone.
