Makes 12
50g butter
½ cup brown sugar
2 tsp ground ginger
1 egg
2 Tbs golden syrup
1 cup plain flour
1 tsp baking soda
½ cup milk
Approximately 15g (1 Tbs) butter, extra
1 Preheat oven to 200C. Put the gem irons in the oven to heat.
2 Cream the butter, sugar and ginger until pale. Add the egg and beat well, then add the golden syrup.
3 Sift the flour and gently stir through the mixture. Dissolve the baking soda in the milk then add.
4 Remove the hot irons from the oven and place small pieces of butter into each. Spoon the mixture on top and bake for 12-15 minutes or until risen and golden.
