Makes 12
100g butter
40g plain flour
1/2 cup icing sugar
80g ground almonds
2 tsp freshly ground coffee
3 egg whites
70g dark chocolate
Softly whipped cream to serve
1 Preheat oven to 180C. Grease the moulds. Melt the butter.
2 Sift the flour and icing sugar into a bowl, stir in the almonds and coffee. Pour in the butter and mix.
3 Whisk the egg whites until fluffy then gently mix through. Pour into the moulds and bake for 15 minutes or until golden.
4 Melt the chocolate in a bowl over a saucepan of simmering water. When melted, stir then drizzle over the cooled friands and serve with cream.
