4 cooking apples
12 amaretti biscuits, crumbled
8 prunes
1 Tbs butter
1 Tbs amaretto liqueur
2 Tbs water
1 cup white sugar
1/4 cup water
1/2 cup cream
1. Preheat oven to 180C. Core the apples and sit in a baking dish.
2. Stuff each apple with the crumbled biscuits and prunes then dot with butter. Pour over the amaretto and water, then pierce the skin of each apple with a skewer. Bake for 45 minutes or until soft.
3. Put the sugar and water in a small saucepan and boil until a caramel colour. Quickly pour in the cream and turn off the heat, stirring as the caramel cools.
4. Pour over the apples and serve with cream.
