1 1/2 cup plain flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup caster sugar
1/2 cup grapeseed oil
2 eggs, lightly beaten
1/2 cup buttermilk
1/2 cup dessicated coconut
Preheat the oven to 180C.
Lightly grease and line a loaf tin.
In a bowl stir together the flour, baking powder, baking soda and salt.
In a second bowl, whisk together the sugar, oil and buttermilk. Using a large bowl, alternately mix together the wet and dry mixes then fold through the coconut.
Bake for approximately 40 minutes or until an inserted skewer is removed clean.
