2 beefsteak tomatoes
Sea salt and freshly ground black pepper
400g goat feta
Fresh thyme
4 bay leaves
1 tbsp olive oil
1 tbsp sweet Pedro Ximenez vinegar
Rocket leaves and crusty bread to serve
Preheat the oven to 180C.
Core and slice the tomatoes into rounds. Lay on an oiled tray, season, and bake for 30 minutes.
In an ovenproof dish, put the feta on top of the thyme and bay leaves.
Drizzle with olive oil and a grind of pepper, then bake for at least 30 minutes or until golden.
Drizzle over the vinegar and serve warm with rocket leaves and warm crusty bread.
