4 cloves garlic, crushed
2 tbsp each: finely chopped fresh thyme, rosemary
3 tbsp each: finely diced pitted black olives, mayonnaise
1 tbsp lemon juice
Method:
Thread the lamb onto skewers. Combine the oil, salt, pepper, garlic and herbs. Press onto the lamb. Cook under a preheated grill on high for 4-5 minutes each side. Stand tented in foil for 2-3 minutes before serving. Combine the olives, mayo and lemon juice. Serve with the lamb. - Serves 4.
