Koftas are Middle Eastern style meatballs or kebabs and can be served as a tapas or with rice and salad for a full meal.
Ingredients:
1 cup long grain rice
1 & 1/2 cups water
1/2 tsp each: salt, ground turmeric

70g packet sliced almonds
400g lean minced lamb or beef
2 tbsp chopped parsley
1tsp each: ground cumin, coriander, dried thyme, crushed garlic
Method:
Cook rice in water together with salt and turmeric, until tender. Drain and combine with almonds.
Meanwhile, combine meat, parsley, cumin, coriander, thyme and garlic.
Form into 8 logs and wrap around wooden skewers. Grill or pan-fry koftas for about 8 minutes, turning often. Serve on the rice. Great served with plain yoghurt combined with chopped mint. --Serves 4.
