400g skinned and boned chicken breast

250g dried vermicelli
400g skinned and boned chicken breast
2 tbsp rice bran oil
2 cups frozen sliced beans, slightly thawed
2 spring onions, chopped
300ml cream
1 tbsp grated parmesan cheese
Method:
Cook vermicelli according to packet instructions.
Cut chicken into 1cm pieces. Heat oil in a large pan. and stir-fry chicken on medium for 2 to 3 minutes.
Add beans and spring onions and stir-fry until hot.
Add cream and simmer, uncovered, for 3 to 4 minutes, then stir in parmesan. Serve on cooked and drained vermicelli.
