2 tbsp clarified butter
1/2 tsp cardamom power
1 packet of plain biscuits (arrowroot or super wine)
In a large pan heat one tablespoon of clarified butter and roast almonds and cashews. You can also add ½ cup walnuts and ¼ cup raisins.
Roast on a low flame until the nuts turn golden and crunchy. Set aside.
Heat another tablespoon of clarified butter in a non-stick pan and add the dates. Stir the dates until they become soft.
Add roasted nuts and coconut powder and mix well.
Add cardamom powder and mix. Turn off the heat.
Spread the date and nut mixture on a well-greased tray. Spread a layer of biscuits on this mixture. Then spread another layer of the date and nut mixture on top of the biscuits (just like making a sandwich).
Let it set for 30 minutes.
Once set, cut into even pieces and your khajur pak is ready to be served.
You can stuff the pak with wafer biscuits instead of plain biscuits or roll the date and nut mixture into balls without the biscuit.
