Kathy Paterson presents a long, hot summer’s worth of vinaigrettes and salad dressings. Make this one as you need it. Pour dressing over boiled new potatoes while they are still hot. Leave for 10 minutes to allow the dressing to mingle with the potatoes. Squeeze over a little lemon juice before serving.
Ingredients
¼ cup | Extra virgin olive oil |
1 Tbsp | Capers, rinsed (Main) |
¼ cup | Parsley, finely chopped (Main) |
1 serving | Salt and freshly ground black pepper, to taste |
1 | Lemon, for squeezing |
Directions
Place ingredients in a small bowl and whisk to combine.
