'Oh God' is always the reaction when this dessert is served to family and friends! In short - it is simply divine!

¾ cup | Macadamia nuts, unsalted and toasted (Main) |

½ tsp | Vanilla essence/extract, .... |
1 Ltr | Vanilla ice cream, .... |
1 jar | Lemon honey, .... |
Directions
- Heat your oven to 180C: Chocolate Macadamia Meringue Biscuits...: Combine toasted macadamia nuts with 2TBS sugar in processor and process until finely ground. Beat the 3 egg whites with the cream of tartar [0.25 tsp./0r 1/4tsp] and a pinch of salt in a large bowl until soft peaks form. Gradually beat in remaining sugar until thick and glossy. Fold in the macadamia and sugar mixture, chocolate chips and vanilla. Place spoonful's of mixture on paper lined oven trays - I aim for 12 if feeding six/6 people - spreading each into a 10cm disc. Bake at 180C for 20 minutes OR until firm and golden. Stand on trays for 5 minutes before transferring to a wire rack to cool completely. Store in an airtight container until required.
- Maple Caramel Sauce: Uses the first 3 ingredients...: Combine 1 cup sugar with enough water to cover in a saucepan, and stir over low het until sugar dissolves. Bring to the boil and simmer, without stirring, until golden. Taking care to shield your hand, add 300ml cream, stirring until mixture is smooth. Add 1/2 cup [125ml] pure maple syrup and stir well to combine. Served warm.
- My [Naine's] Lemon Delicious Ice-cream: I use Kapiti's Vanilla Bean Ice-cream! and I add a jar [appr. 250g] of either home-made or a good quality Lemon Honey to the ice-cream, blend gently and refreeze until needed for the dessert.
- To Serve: Place a biscuit in each serving bowl and top with 1 or 2 scoops of the Lemon Honey Ice-cream. Pour over the Maple Caramel Sauce, top with another biscuit and sprinkle either with icing sugar or cocoa powder...... Serve - and prepare to be worshiped...:-)
