Ingredients
1 Tbsp | Brown sugar |
4 | Plums, (large dark red, halved with stones removed) |
1 | Cinnamon stick |
1 Tbsp | Butter |
400 g | Honey |
150 g | Butter |
1 cup | Milk |
1 | Egg |
250 g | Flour |
1 to serve | Cream, (softly whipped) |
Directions
- Preheat oven to 180C. Place the plums in an ovenproof dish. Sprinkle with sugar, bury the cinnamon stick in the middle, and dot the plums with butter. Cook for 30 minutes.
- Grease a 20cm cake tin. Pour the honey into a large bowl and, using electric beaters, add the butter and half of the milk then mix until smooth. Add the rest of the milk with the egg, continue beating then fold in the flour.
- Spoon into the cake tin and bake for 35 minutes or until an inserted skewer comes out clean - another five minutes may be necessary. Leave the cake in the tin for at least 10 minutes to cool before slicing and serving with plums and cream.
