Incredibly delicious and very quick and easy to make as long as you remember to freeze the coconut cream - sugar free gluten free and dairy free and very good for you- but no one will notice!
Ingredients
1 can | Coconut cream, FREEZE! (Main) |
1 kg | Pitted cherries, Halved |
1 cup | Cacao nibs |
1 block | Dark chocolate |
Directions
- Place can of frozen coconut cream in blender with 1/4 of the fresh pitted cherries and pulse /blend until you get a smooth creamy icecream texture
- Fold in the cacao nibs, and most of the remaining cherries (halved) reserving a few for decorating
- Spoon the pudding into wine glasses and top with reserved cherries and curls of dark chocolate ( use a peeler to shave chocolate bar to create chocolate curls)
