Using up leftover roast lamb, vegetables (and the gravy!) is a fantastic way to pull together a quick pie filling. Seasoned with spices and fresh herbs (curry spices and lots of mint and coriander work with lamb) you can turn this into puff pastry pasties, or make a herb or cheddar shortcrust and bake it into a large family pie. Roast lamb on the weekend — lamb pies on Thursday — yum yum, lamb’s bum!

It's great to have a day to celebrate New Zealand grass-fed lamb — we need more festivals with special food so I will make a point of cooking lamb on May 24. Lamb chops with feta and cucumber, crushed lemony peas and risone is an easy favourite and not too expensive. Lamb goes well with the tartness of lemon and yoghurt and the rich sweetness of peas. The creaminess of the pasta is a good foil for all of it. Make sure you brown the lamb chops well over high heat. Happy Lamb Day!
