125g thinly sliced frozen beans
400g mixed seafood eg prawns, cubed white fish, squid rings
1/2 cup chopped coriander or parsley
2 tbsp lemon juice
1 tbsp fish sauce or light soy sauce
Method:
Place the curry paste in a large saucepan. Whisk in 1/2 a cup of coconut cream. Slowly bring to the boil. Stir in the remaining coconut milk and water. Add the beans and seafood. Return to the boil. Simmer for about 3 minutes, until heated through. Add the coriander, lemon juice and fish or soy sauce. Great served with rice.-- Serves 4.
